Instructions:
For the Ayam Berempah:
- Grind the following into a paste: 10 dried chili, 6 shallot onions, 4 garlic cloves, 1 inch ginger, 1 inch turmeric, 1 tablespoon of coriander seeds, and 1 tablespoon of cumin seeds).
- In a wok, heat up oil and fry the spice paste until fragrant.
- Add in the chicken and fry until lightly browned on each side.
- Add in the coconut milk, lemongrass, ginger, turmeric leaves, salt and sugar to taste.
- Cook until the chicken is tender and the gravy is thick.
For the Nasi Lemak:
- In a rice cooker, add in the washed rice, pandan leaves, and salt to taste.
- When the rice is cooked, fluff it up with a fork and add in the sliced turmeric leaves.
